Cocktails: Improved Martinis and Manhattans

A true martini is approximately 4 parts vodka or gin to one part dry vermouth.
Substitute a good very dry white sherry, such as a juarana or dry sack instead of the vermouth.
In a manhattan, any good sherry from tawny to a solera, or even a port instead of sweet vermouth.
Why use a cheapo 5 dollar a bottle of vermouth, if you already splurged for the the top shelf vodka, bourbon, gin, etc. Use less of the sherry or port -- it goes a long way. If you like the spice of true vermouth, add a dash of bitters, to taste.
