Sauteed Chayote

2- Chayote Squash
1- large yellow onoion
1- tablespoon of garlic flavored olive oil
coarse salt and white pepper to taste
chicken stock
prep-
peel the chayote and cut into 1 inch cubes
dice the onion and saute in the garlic oil until slightly browned. about 5 minutes.
add the chayote, 2-3 tbls of chicken stock and simmer for 15-20 minutes.
add salt and freshly ground white pepper to taste
optional- for spicy, add a pinch of red pepper flakes
serves 4
